The Perfect French Toast

I made this for Dane last night as per his request, and he loved it! Since so many of you have been requesting… My recipe for the Perfect Vegan French Toast

Ingredients:

(yields about 6 pieces)
• bread – in the photo above, I used Whole Foods Flax Quinoa bread. Regular whole wheat will do, but a wetter bread will take longer to cook. Baguettes are also great.
• 1 1/2 c vegan milk
• 1 flax egg
• 1 whole banana (if you want less banana flavor, use half the banana and add one more flax egg)
• 1 tbsp vanilla
• pinch of salt
• 1 tbsp ground cinnamon
• oil or cooking spray to prevent sticking

Set your griddle to 350 degrees. if you’re using a pan, just know it should be screaming hot when you out the toast in. Put all ingredients into a blender until completely smooth. Coat the bread on both sides, but make sure to remove the excess batter from the slice before cooking. Add oil to surface (just brush it), and place the coated bread down to cook immediately after the batter has been applied. You can tell by color when it’s done and ready to flip – I’d give a time estimate, but it’s just instinct to me from cooking French toast at work every day!
